This product uses plenty of sake rice (1.4 times as much as that of Josen Ozeki). The rich, strong and sweet sake has an elegant sweetness from rice. It tastes not just sweet but also mildly acid, having a smooth flavor and refreshing aftertaste.
It is authentic taru sake of dry Junmai made with kimoto method, which is first poured into a cask made of Yoshino cedar and then drawn from the cask and bottled just as this aroma reaches its peak. It is distinguished by the umami with a lingering finish, which is unique to Junmai, and a mellow taste and crisp finish, together with a refreshing aroma of Yoshino cedar.
While keeping the crisp and rich taste, which is distinctive to traditional skills called kimoto method, the sake is heat sterilized once instead of twice (though it is usually done twice), and the fresh sake is stored in bottles so as to bring out the fresh taste and refreshing flavor with reminiscent of the rich fragrance of fruit.
This sake uses Kyoto's Fushimizu, one of exquisite and well-conserved waters, and the premium sake rice Yamadanishiki. The rice polishing ratio is 50%. It is fermented taking longer time at a low temperature around 10℃.
